History of the tree

The Lebanon Oak tree, scientifically known as the “Quercus Libani”
is a species native to the Eastern Mediterranean and Western Asian
regions.  People refer to it as the “Abrahams
Oak” or “Common Oak”.  The tree is also a
symbol of wellness and providence. 

Oak species are often found in deciduous forests, where cool to
temperate regions allow them to grow freely by giving them the environment they
desire. The Quercus Libani, in particular, thrives in the Mediterranean climate
zone. It grows all across the Middle East, from Alegria to Turkey, and farther
even, although the highest concentration of Quercus Libani are in the east
Mediterranean. Its preferred soil is limestone, and it uses mid elevations
(typically an elevation of around two hundred feet) to dominate the surrounding

Plant Description

Quercus libani is
a deciduous tree
growing to 8 metres (26 ft). The deciduous leaf is slender, elongated and
often asymmetrical, its base is round and its tip is slightly pointed. In the
adult state the leaf’s upper side is dark green and the underside is pale green.

The flowers are monoecious,
meaning that flowers from both sexes can be found on the same tree. They are
pollinated by wind. The tree produces acorns that grow to
about 2 cm to 3.5 cm in diameter. Its length is half covered by
the cupule.10



Production process

The bee farm is located in two different areas: one at high altitude
and the other in low altitudes. Our bees are able to work all year long.

There are two different types of honey harvested by the Cedar
Honey company. High altitude and Low altitude honey. This is why our honey has
two different tones and textures. We are able to provide two different
medically graded honeys that achieve different benefits for their consumers.

The high altitude (oak
elixir honey) is a dark amber colour and thicker in texture. Quantity is very
rare. It requires double the work from beekeepers and the bees. Located 1100 meters
above sea level in the mountains of Lebanon, where the bees are kept warm
through the winter and in summer the bees fly out to pollinate local oak trees.

The high altitude bees
are in harsh cold weather conditions making the harvesting process time harder
than the lower altitude and difficult for both beekeeper and bees. There is a
higher demand from locals for this type of honey as the bees are in hibernation
during the snowy periods which is 2-3 months per year. Beekeepers constantly
check up on the bees during this period as the conditions are quite harsh.
Beekeepers must ensure the bees are kept warm during the winter in specially
crafted beehives.

The low altitude
(vegetation elixir honey) is a light gold colour and the bees therefore work in
a warmer climate (located at the lower end of the mountains in Lebanon) feeding
off local vegetation mainly olive trees and fruit trees. The lower regions bees
are kept separate from are kept separate from the bees in the upper mountain. This
type of honey is readily available.
